Red snapper is a good meaty fish. Unfortunately, coming from the Gulf of Mexico it probably is quite 'oily' nowadays.

true, my mum being from caribbean we ate it all the time. it's only as you get older you notice what crap fish is sold nowadays. I recall how me and my best mate (when we were in our teens) - And you know how girls used to hang out in groups - boys = gangs - Anyway - when we had 'copped off' 
With two girls (usually also best friends) we used to go around to the house of one of them and see how far we could get...and so me and my mate would later compare 'Fishy fingers' to see who got the furthest!
