mates, i went to this 'irish pub' yesterday called mulligan, here in my town. it's an excellent pub, great beers, great place. anyway, i usually go there only to drink as it is a little expensive but i was hungry so i asked for a thing called a 'boxty', and fuck me it was delicious. i was told it is quite traditional in ireland, is it true? i mean, is it something people eat all the time over there? i'm sure it's there with the most delicious things i've ever tasted. a shame it was a little expensive so i cannot be going there every week
anyway, i'm really starting to think about going to ireland for a couple of days in september. i'll be in london for over a week and in europe for around a month, so don't see a reason why not tasting a couple of guinness where they come from

BOXTY LOAF
Ingredients:
500g of white flour
500g of raw potatoes
250g of boiled mashed potatoes
250g of butter or margarine
Salt to flavour
Grate the raw potatoes into a bowl.
Strain, discard the liquid and put the pulp into a large mixing bowl.
Melt the butter and mix with the mashed potatoes and salt
Add to the potato pulp and knead the dough lightly.
Shape into a loaf.
Wrap completely in muslin cloth and place in a pan of hot water bring to the boil and simmer for approximately two and a half hours.
Drain and cool completely. Remove muslin cloth.
Store in fridge ready for use.
Slice thinly as required and fry in butter on a hot pan until golden brown.
Serve immediately with salt and butter.
Variation pancake boxty.
Ingredients as above omitting the boiled potatoes.
Mix flour and potato pulp.
Flavour with salt. Add milk to make a creamy consistency.
Cook thinly on a hot well oiled pan to a golden brown.
Serve immediately.

It is an old old Oirish dish. But most Mick's eat Japanese, Italian, Chinese, Indian, Thai or "American" (burgers, pizza etc) food.
For me it's Jap or Indian. Yum fucking yum.

Boxty are also a cracking band from Bundoran in Donegal with one the most gifted guitar playing front men i ever seen. Have had great nights out at them and with them. Mental hoors.

ive seem boxty the band in cork years ago. but not the food. stick to bacon and cabbage
