I really like the nfl version of this (it's called hard knocks) where they give you an in depth behind the scenes look at the teams releasing players and shit like that - I am curious to know if AFC have editing rights on it meaning that they have to approve everything that is going to be shown. In the nfl I dont believe that the clubs can refuse to take part, but there are certain criteria that determines what team is picked to feature - the selected team cannot have been in the play offs in the previous 2 years, it cant be a team with a new head coach, and the team cannot have been featured within the last 10 years, but I still find it good viewing most of the time. I know that last year it was in the middle of a pandemic, but they decided to feature both LA teams and tbh it wasnt great viewing

I didn't watch either of the city or scum versions (obviously) so I'm not sure exactly what the format is or how much access is given to dressing rooms pre/post game etc.
Word on the street (internet) is that Amazon first approached Liverpool but Klopp shot it down because he didn't want any of the behind the scenes stuff shown, whether Arteta was even consulted about this or if Josh juts said yes and trousered all the cash is anyone's guess.
